During August the well-balanced whether allowed our grapes to ripe slowly in the shadow of vine leaves… Then the harvest time came. At this moment the nature gave us its full ripe fruits containing delicate aromas, high level of sugar and acidity allowing a good ageing ability to the future Champagne !
Now, the alcoholic fermentation is slowly transforming sugar into alcohol and highlighting all the aromas from the grapes.
The making of our Champagne Rosé (picture 8 and 9) has been an important time during the harvest by sorted out the best grapes and taking care of the maceration of the berries in the juice to obtain the perfect colour and aromas.
